I worked in profession kitchens for a long time. I even ran my own little cafe for a couple of years, which I loved! But it was at this time that I discovered the reason for my illness was my crappy diet and being forced to eat these foods for work everyday was not helping.
So I started looking for another job.

Finding the whole foods plant based lifestyle really did change my life.
And while I no longer cook professionally, I will always be a chef at heart.

So for me learning keto is like learning a new cuisine. I love it. I love the callenge.
I however HATE baking. I hate regular baking and it sucks because they alway try and stick the girls in pastry and Im not a scientist. I dont like to measure.
Im an intuitive cook, I cook by taste.
So keto baking is hard.
